Ingredients
- 3 cups fresh, frozen (thawed), or canned (rinsed and drained) corn kernels
- 1/2 small red onion, finely diced
- 1 red bell pepper, finely diced
- 1 yellow bell pepper, finely diced
- 1/2 cup fresh cilantro, chopped
- 1–2 jalapeños, seeded and minced (adjust to taste)
- 3 tablespoons fresh lime juice (from 2–3 limes)
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon sea salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
Instructions
- Prepare Corn: If using fresh, slice kernels from cob. If frozen, thaw and drain. If canned, rinse and drain well.
- Chop Vegetables: Finely dice red onion, bell peppers, and jalapeño. Mince cilantro. Aim for uniform pieces.
- Combine: In a large bowl, mix corn, red onion, bell peppers, jalapeño, and cilantro.
