  • 1 yellow bell pepper, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 12 jalapeños, seeded and minced (adjust to taste)
  • 3 tablespoons fresh lime juice (from 23 limes)
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon sea salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)

Instructions

  • Prepare Corn: If using fresh, slice kernels from cob. If frozen, thaw and drain. If canned, rinse and drain well.
  • Chop Vegetables: Finely dice red onion, bell peppers, and jalapeño. Mince cilantro. Aim for uniform pieces.
  • Combine: In a large bowl, mix corn, red onion, bell peppers, jalapeño, and cilantro.
