Ingredients

  • 12 wonton wrappers
  • 1 tbsp oil (vegetable, canola, or avocado)
  • 1 lb boneless, skinless chicken breast, cooked and shredded
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup hoisin sauce
  • 2 tbsp mirin (or 2 tbsp rice vinegar + 2 tsp sugar)
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp sriracha (optional)
  • 4 cups pre-shredded cabbage and carrot mix
  • 1/2 cup mayonnaise
  • 2 tbsp rice vinegar
  • 1 tbsp granulated sugar
  • 1 tsp sesame oil
  • 2 tbsp sliced green onions, for garnish
  • 1 tsp sesame seeds, for garnish

Instructions

  • Prepare Chicken Filling: Cook chicken breast, shred, then mix with soy sauce, hoisin, mirin, garlic, ginger, and sriracha. Set aside.
  • Bake Wonton Shells: Preheat oven to 375°F (190°C). Lightly grease a muffin tin. Press wonton wrappers into cups, brush with oil, and bake for 6-8 minutes until golden and crispy.
  • Make Creamy Slaw: Whisk together mayonnaise, rice vinegar, sugar, and sesame oil. Pour over cabbage/carrot mix and toss. Chill for 15-20 minutes.
  • Assemble Tacos: Fill each crispy wonton shell with chicken, top with creamy slaw, and garnish with green onions and sesame seeds. Serve immediately.
