Ingredients

  • 4 boneless, skinless chicken breasts (about 68 oz each)
  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 23 fresh jalapeños, minced (seeds and ribs removed for less heat)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 812 slices thin-cut bacon
  • Wooden toothpicks or small skewers (soaked)

Instructions

  • 1. Prep Chicken: Butterfly each chicken breast, then pound to 1/2-3/4 inch thickness.
  • 2. Make Filling: In a bowl, combine softened cream cheese, cheddar, minced jalapeños, garlic powder, onion powder, salt, and pepper. Mix well.
  • 3. Stuff Chicken: Spread filling evenly onto one half of each butterflied chicken breast. Fold the other half over to create a pocket.
  • 4. Wrap with Bacon: Secure 2-3 slices of bacon around each stuffed chicken breast, overlapping slightly. Secure with toothpicks.
  • 5. Bake: Preheat oven to 400°F (200°C). Place chicken on a baking sheet (or wire rack) and bake for 25-35 minutes, or until internal temperature reaches 165°F (74°C) and bacon is crispy.
  • 6. Rest & Serve: Let rest for a few minutes before serving.
