Ingredients
- 6 cups mixed spring greens
- 1 cup fresh blueberries
- 1/2 cup shelled pistachios, lightly toasted
- 4 oz crumbled goat cheese
- 1/4 red onion, thinly sliced
- For the Balsamic Vinaigrette:
- 3 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- 1. Prepare Ingredients: Wash and dry greens. Slice red onion thin. Toast pistachios if desired and let cool. Crumble goat cheese.
- 2. Make Vinaigrette: In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper until emulsified.
