Ingredients
- 1 (15 oz) bag sturdy tortilla chips
- 1 lb ground beef, chicken, or vegetarian equivalent (e.g., black beans)
- 1 packet taco seasoning (or your preferred blend of cumin, chili powder, garlic powder)
- 2 cups shredded Monterey Jack cheese
- 1 cup shredded sharp cheddar cheese
- 1/2 cup diced red onion
- 1/2 cup pickled jalapeño slices (more or less to taste)
- 1/4 cup chopped fresh cilantro
- 1/4 cup sliced green onions
- For serving: Salsa, sour cream, guacamole, extra pickled jalapeños
- Baking spray with flour (e.g., Baker’s Joy)
Instructions
- Step 1: Prepare Meat/Beans (if using). If using ground beef, brown it in a skillet, drain excess fat, and stir in taco seasoning according to package directions. If using black beans, rinse and drain, then season lightly.
- Step 2: Preheat Oven & Prepare Bundt Pan. Preheat your oven to 375°F (190°C). Generously spray a 10-12 cup Bundt pan with baking spray containing flour, ensuring all crevices are coated.
- Step 3: Layer the Nachos. Place approximately 1/3 of the tortilla chips into the bottom of the Bundt pan, pushing them down gently and arranging them up the sides. Sprinkle with 1/3 of the cooked meat/beans, followed by 1/3 of the mixed cheeses. Repeat these layers two more times, ending with a generous layer of cheese on top. Gently press down on the layers to slightly compact them.
- Step 4: Bake. Place the Bundt pan on a baking sheet (to catch any potential cheese drips) and bake for 18-25 minutes, or until the cheese is bubbly, melted, and slightly golden brown, and the chips are crisp.
