Ingredients

  • 2 large, all-butter croissants
  • 4 large eggs
  • 2 slices of cheese (cheddar, provolone, Swiss)
  • 4 slices cooked bacon or 2 cooked sausage patties
  • 1 tbsp butter or neutral oil
  • Salt and freshly ground black pepper to taste
  • Optional: Sliced tomato, avocado, spinach

Instructions

  • 1. Prepare Croissants: Preheat oven to 350°F (175°C). Slice croissants horizontally, not all the way through. Place on a baking sheet and warm in the oven for 3-5 minutes until lightly toasted.
  • 2. Cook Eggs: Whisk eggs with salt and pepper. Heat butter/oil in a non-stick skillet over medium-low heat. Pour in eggs and cook, stirring gently for scrambled or folding for an omelet, until just set.
  • 3. Melt Cheese: As eggs finish cooking, place cheese slices on top of the hot eggs in the pan to melt.
  • 4. Assemble: Place cooked meat on the bottom half of each warmed croissant. Carefully slide the cheesy eggs on top of the meat. Add optional toppings. Place the top half of the croissant. Serve immediately.
