Ingredients
- 2 lbs boneless, skinless chicken thighs
- 1/4 cup honey
- 1/4 cup hoisin sauce
- 2 tbsp light soy sauce
- 1 tbsp Shaoxing rice wine (or dry sherry)
- 1 tbsp minced garlic
- 1 tbsp minced fresh ginger
- 1 tsp Chinese five-spice powder
- 1 tsp red fermented bean curd, mashed (optional, or a few drops red food coloring)
Instructions
- Step 1: Prep Chicken. Pat chicken thighs dry. If thick, pound lightly to even thickness. Place in a large bowl or resealable bag.
- Step 2: Make Marinade. In a separate bowl, whisk together honey, hoisin sauce, soy sauce, rice wine, garlic, ginger, five-spice powder, and red fermented bean curd or food coloring until smooth.
- Step 3: Marinate. Pour marinade over chicken, ensuring all pieces are coated. Refrigerate for at least 4 hours, or preferably overnight (up to 24 hours).
- Step 4: Bake. Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. Arrange chicken on the rack, reserving extra marinade. Bake for 15-20 minutes, flipping halfway.
- Step 5: Glaze & Finish. Brush chicken generously with reserved marinade. Increase oven to 425°F (220°C) or broil. Continue baking/broiling for 5-10 minutes, brushing with more glaze every 2-3 minutes, until cooked through and nicely charred but not burnt (internal temp 165°F/74°C).
