Ingredients
- 2 medium Yukon Gold or Red Bliss potatoes, diced into ½-inch cubes
- 1 tbsp olive oil or unsalted butter (or a combination)
- ¼ small yellow onion, minced
- 1 clove garlic, minced
- 4 large eggs
- 1 tbsp milk or cream (optional, for creamier eggs)
- ½ cup shredded sharp cheddar or Monterey Jack cheese
- Salt and freshly ground black pepper to taste
- Pinch of paprika (smoked paprika for extra flavor)
- 1 tbsp fresh chives or green onions, chopped (for garnish)
Instructions
- Prep Ingredients: Dice potatoes, mince onion and garlic. Whisk eggs with milk (if using), salt, and pepper. Grate cheese.
- Cook Potatoes: Heat oil/butter in a large non-stick skillet over medium-high heat. Add potatoes, season with salt, pepper, and paprika. Cook for 10-15 minutes, stirring occasionally, until tender and golden. Add onion and garlic during the last 3-5 minutes. Remove potatoes/aromatics and set aside.
- Scramble Eggs: Reduce heat to medium-low. Add a little more fat if needed. Pour in whisked eggs. Let sit briefly, then gently push eggs from edges to center until mostly set but still creamy.
- Combine & Serve: Return potatoes/aromatics to the pan with the eggs. Sprinkle with cheese. Cook, stirring gently, for 1-2 minutes until cheese is melted and gooey. Garnish with chives/green onions and serve immediately.
