Ingredients
- 1 large English cucumber
- 1.5 cups cooked chicken breast, shredded or finely diced
- 1/2 cup mayonnaise (or plain Greek yogurt)
- 2 tbsp fresh dill, chopped
- 1 tbsp fresh chives, chopped
- 1 tbsp fresh parsley, chopped
- 1/4 cup celery, finely diced (optional)
- 2 tbsp red onion, finely minced (optional)
- Salt and freshly ground black pepper to taste
- Toothpicks (optional, for securing)
Instructions
- 1. Prepare Cucumber: Wash and dry the English cucumber. Using a mandoline or vegetable peeler, slice the cucumber lengthwise into thin ribbons, about 1/16 to 1/8 inch thick. Discard ends and overly seedy parts. Lay slices on paper towels and pat very dry.
- 2. Make Chicken Salad: In a medium bowl, combine shredded chicken, mayonnaise (or Greek yogurt), dill, chives, parsley, optional celery, and optional red onion. Season with salt and pepper to taste. Mix until well combined.
- 3. Assemble Rolls: Place a small spoonful (1-2 teaspoons) of chicken salad at one end of a cucumber ribbon. Carefully roll the cucumber ribbon tightly around the filling to create a spiral. Secure with a toothpick if desired.
- 4. Chill and Serve: Arrange assembled roll ups on a plate or in an airtight container. Cover and refrigerate for at least 30 minutes to allow flavors to meld and chill thoroughly. Serve cold.
