Ingredients

- 1/2 teaspoon red pepper flakes (or more, to taste)

- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- For the Ground Beef Bowls:
- 1 tablespoon olive oil
- 1 lb lean ground beef (85/15 or 90/10)
- Salt and black pepper, to taste
- 3 cups cooked quinoa, rice, or cauliflower rice (for serving)
- Optional Toppings: Cherry tomatoes, sliced avocado, pickled red onions, crumbled feta cheese
Instructions
- 1. Prepare the Chimichurri: In a food processor or with a sharp knife, finely chop parsley, cilantro, and garlic. Transfer to a bowl. Add red wine vinegar, red pepper flakes, dried oregano, salt, and pepper. Slowly whisk in olive oil until well combined. Set aside.
- 2. Cook the Ground Beef: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef, breaking it up with a spoon. Season with salt and pepper. Cook until fully browned and no pink remains, about 6-8 minutes. Drain any excess fat.
- 3. Assemble the Bowls: Divide cooked grains among 4 serving bowls. Top each with a generous portion of the cooked ground beef.
