Ingredients

  • For the Chimichurri:
  • 1 cup fresh parsley, packed, finely chopped
  • 1/2 cup fresh cilantro, packed, finely chopped
  • 45 cloves garlic, minced
  • 1/4 cup red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 1/2 teaspoon red pepper flakes (or more, to taste)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • For the Ground Beef Bowls:
  • 1 tablespoon olive oil
  • 1 lb lean ground beef (85/15 or 90/10)
  • Salt and black pepper, to taste
  • 3 cups cooked quinoa, rice, or cauliflower rice (for serving)
  • Optional Toppings: Cherry tomatoes, sliced avocado, pickled red onions, crumbled feta cheese

Instructions

  • 1. Prepare the Chimichurri: In a food processor or with a sharp knife, finely chop parsley, cilantro, and garlic. Transfer to a bowl. Add red wine vinegar, red pepper flakes, dried oregano, salt, and pepper. Slowly whisk in olive oil until well combined. Set aside.
  • 2. Cook the Ground Beef: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef, breaking it up with a spoon. Season with salt and pepper. Cook until fully browned and no pink remains, about 6-8 minutes. Drain any excess fat.
  • 3. Assemble the Bowls: Divide cooked grains among 4 serving bowls. Top each with a generous portion of the cooked ground beef.
  • 4. Drizzle and Serve: Spoon a generous amount of fresh chimichurri over the ground beef in each bowl. Add any desired optional toppings like cherry tomatoes, sliced avocado, or pickled red onions. Serve immediately and enjoy!
