Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef or turkey
  • 1 medium onion, chopped
  • 1 (10.5 oz) can cream of mushroom soup
  • 1/2 cup milk (whole preferred)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 (10 oz) package frozen mixed vegetables (corn, peas, carrots, green beans)
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 (32 oz) bag frozen tater tots

Instructions

  • Preheat Oven & Prepare Dish: Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  • Brown Meat & Sauté Onion: In a large skillet over medium-high heat, brown ground beef (or turkey), breaking it up. Drain excess fat. Add chopped onion and sauté until translucent, about 5 minutes.
  • Combine Filling: Stir in cream of mushroom soup, milk, salt, pepper, and frozen mixed vegetables with the meat and onions. Mix well until creamy and thoroughly combined.
  • Assemble Casserole: Pour the filling into the prepared baking dish, spreading evenly. Sprinkle 1 cup of shredded cheddar cheese over the filling. Arrange the frozen tater tots in a single layer over the cheese.
  • Bake & Finish: Bake for 30-35 minutes, until the filling is bubbly and tater tots are mostly golden. Remove from oven, sprinkle remaining 1 cup of cheese over tater tots. Return to oven for another 5-10 minutes, or until cheese is melted and bubbly, and tater tots are golden and crispy. Let rest 5-10 minutes before serving.
