Ingredients
- 12 Large Eggs
- 1 (16 oz) container full-fat cottage cheese
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions (or chives)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Optional additions: Cooked and crumbled bacon, cooked sausage, finely diced bell peppers, sautéed spinach
Instructions
- Preheat Oven & Prep Muffin Tin: Preheat your oven to 325°F (160°C). Generously spray a 12-cup standard muffin tin with non-stick cooking spray or use silicone liners.
- Blend Egg & Cottage Cheese Base: In a blender, combine eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend until completely smooth and no curds remain (about 30-60 seconds).
- Add Fillings: Pour the blended mixture into a large bowl. Stir in the shredded cheddar cheese, green onions, and any other desired optional fillings until evenly combined.
- Fill Muffin Tin: Divide the mixture evenly among the 12 prepared muffin cups, filling each about ¾ full.
- Bake: Bake for 20-25 minutes, or until the egg bites are puffed up, set in the center, and lightly golden brown around the edges.
- Cool & Serve: Remove from oven and let cool in the muffin tin for 5-10 minutes before gently removing. Serve warm.
