- 1 cup shredded sharp cheddar cheese
- 2–3 fresh jalapeños, minced (seeds and ribs removed for less heat)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8–12 slices thin-cut bacon
- Wooden toothpicks or small skewers (soaked)
Instructions
- 1. Prep Chicken: Butterfly each chicken breast, then pound to 1/2-3/4 inch thickness.
- 2. Make Filling: In a bowl, combine softened cream cheese, cheddar, minced jalapeños, garlic powder, onion powder, salt, and pepper. Mix well.
- 3. Stuff Chicken: Spread filling evenly onto one half of each butterflied chicken breast. Fold the other half over to create a pocket.
- 4. Wrap with Bacon: Secure 2-3 slices of bacon around each stuffed chicken breast, overlapping slightly. Secure with toothpicks.
