  • 1.5 lbs small waxy potatoes (e.g., Yukon Gold, red potatoes), cut into 1.5-inch chunks
  • 1 lb carrots, peeled and cut into thick rounds or chunks
  • 1 medium green cabbage, halved and cut into 46 wedges
  • 1 tbsp olive oil (for searing, optional)
  • Dijon mustard for serving (optional)

Instructions
