Ingredients
- 1 lb ground beef (80/20 recommended)
- 6 slices bacon, chopped
- 1 lb bulk mild Italian sausage
- 1 large yellow onion, chopped
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 2 lbs Yukon Gold or red potatoes, peeled and diced
- 1 (15 oz) can diced tomatoes, undrained
- 1 cup frozen corn
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- 1½ cups heavy cream
- Salt and freshly ground black pepper to taste
- Fresh chives or cilantro for garnish (optional)
Instructions
- Cook Bacon: In a large Dutch oven or soup pot, cook the chopped bacon over medium heat until crispy. Remove bacon with a slotted spoon, reserving 2-3 tablespoons of bacon fat in the pot. Set crispy bacon aside.
- Brown Meats: Add ground beef and bulk sausage to the pot with the reserved bacon fat. Cook over medium-high heat, breaking up the meat with a spoon, until fully browned. Drain most of the accumulated grease, leaving about 1 tablespoon.
- Sauté Aromatics: Add chopped onion and celery to the pot. Sauté for 5-7 minutes until softened. Stir in the minced garlic and cook for 1 minute more until fragrant.
- Combine Ingredients & Simmer: Return the cooked meats to the pot. Add the diced potatoes, canned tomatoes (undrained), frozen corn, chicken broth, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Stir well. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until potatoes are tender.
- Add Cream & Finish: Stir in the heavy cream. Heat gently for about 5 minutes, allowing the soup to thicken slightly. Taste and adjust seasonings as needed. Serve hot, garnished with reserved crispy bacon and fresh chives or cilantro, if desired.
