Ingredients
- 2–3 large English cucumbers (or 4–5 Persian cucumbers)
- 1 tsp salt (for draining cucumbers) + more to taste
- 1 cup full-fat sour cream or plain Greek yogurt
- 2 tbsp apple cider vinegar
- 1/4 cup finely minced fresh dill
- 2 tbsp finely minced red onion
- 1–2 tsp granulated sugar (to taste)
- 1/4 tsp black pepper, freshly ground
Instructions
- Prepare the Cucumbers: Wash and thinly slice cucumbers (peel if using regular garden cucumbers and deseed if necessary). Place in a colander, sprinkle with 1 tsp salt, toss, and let sit for 30-60 minutes to drain excess water.
- Drain and Pat Dry: Squeeze cucumbers gently to remove more water, then pat thoroughly dry with paper towels or a clean kitchen towel.
- Make the Creamy Dressing: In a bowl, whisk together sour cream/Greek yogurt, apple cider vinegar, minced red onion, fresh dill, sugar, black pepper, and an additional pinch of salt. Taste and adjust seasonings.
