Ingredients

  • 2 medium zucchinis
  • 1 tsp salt (for drawing out moisture)
  • 1 large egg
  • 1 tbsp water or heavy cream
  • 1/2 cup almond flour, blanched and super-fine
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • Olive oil spray

Instructions

  • Prep Zucchini: Wash and trim zucchinis, then cut into 1/4 to 1/2-inch thick, 3-4 inch long fry-like sticks. Place in a colander, sprinkle with 1 tsp salt, and let sit for 15-20 minutes. Firmly pat dry with paper towels to remove excess moisture.
  • Preheat Oven & Set Up Breading Station: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. In one shallow dish, whisk the egg and water/cream. In another shallow dish, combine almond flour, Parmesan cheese, garlic powder, onion powder, and paprika.
  • Coat Zucchini: Working in small batches, dip each zucchini stick into the egg wash, then transfer to the dry mixture, pressing to ensure an even, generous coating on all sides.
  • Arrange & Spray: Arrange coated zucchini fries in a single layer on the prepared baking sheet, ensuring they do not touch. Lightly spray the tops of the fries with olive oil spray.
