Ingredients

  • 2 lbs boneless, skinless chicken thighs (or breasts)
  • 1 large yellow onion, chopped
  • 2 large carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt (plus more to taste)
  • 1/4 tsp black pepper (plus more to taste)
  • 8 cups low-sodium chicken broth
  • 2 lemons, zested and juiced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • Optional: orzo or rice for serving

Instructions

  • Prep Your Ingredients: Chop your onion, carrots, celery, and mince your garlic. Zest one lemon and set aside, then halve both lemons for juicing later.
  • Combine in the Crockpot: Place chicken, onion, carrots, celery, garlic, dried oregano, salt, pepper, chicken broth, and lemon zest into your slow cooker. Stir gently.
  • Set and Forget: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until chicken is very tender.
