Ingredients
- 2 lbs boneless, skinless chicken thighs (or breasts)
- 1 large yellow onion, chopped
- 2 large carrots, peeled and chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt (plus more to taste)
- 1/4 tsp black pepper (plus more to taste)
- 8 cups low-sodium chicken broth
- 2 lemons, zested and juiced
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- Optional: orzo or rice for serving
Instructions
- Prep Your Ingredients: Chop your onion, carrots, celery, and mince your garlic. Zest one lemon and set aside, then halve both lemons for juicing later.
- Combine in the Crockpot: Place chicken, onion, carrots, celery, garlic, dried oregano, salt, pepper, chicken broth, and lemon zest into your slow cooker. Stir gently.
- Set and Forget: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until chicken is very tender.
- Finishing Touches: Remove and shred chicken, then return to soup. Stir in fresh lemon juice, dill, and parsley. Taste and adjust seasonings as needed. Serve hot.
