- 2 cups all-purpose flour, sifted
- 1 tsp baking powder
- 1 tsp baking soda

- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- ½ cup light brown sugar, packed
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 1 ½ cups mashed cooked yam puree (from about 1 large yam)
- ½ cup buttermilk, room temperature
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or a 9-inch round cake pan.
- In a medium bowl, whisk together the sifted flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar on medium-high speed until light and fluffy (3-5 minutes).
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate small bowl, combine the mashed yam puree and buttermilk.
- Alternately add the dry ingredient mixture and the yam/buttermilk mixture to the creamed mixture, beginning and ending with the dry ingredients. Mix on low speed just until combined; do not overmix.
- Pour batter into the prepared pan and spread evenly.
- Bake for 30-40 minutes (or 35-45 for a round cake) or until a wooden skewer inserted into the center comes out clean.
- Cool in the pan on a wire rack for 10-15 minutes, then invert onto the rack to cool completely before frosting or serving.
