Ingredients

  • 2 cups all-purpose flour, sifted
  • 1 tsp baking powder

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup light brown sugar, packed

  • 1 tsp vanilla extract
  • 1 ½ cups mashed cooked yam puree (from about 1 large yam)
  • ½ cup buttermilk, room temperature

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or a 9-inch round cake pan.
  • In a medium bowl, whisk together the sifted flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar on medium-high speed until light and fluffy (3-5 minutes).
  • Beat in eggs one at a time, then stir in vanilla extract.
  • In a separate small bowl, combine the mashed yam puree and buttermilk.
  • Alternately add the dry ingredient mixture and the yam/buttermilk mixture to the creamed mixture, beginning and ending with the dry ingredients. Mix on low speed just until combined; do not overmix.
