Ingredients
- 24 oz (approx. 680g) Fresh Strawberries, hulled
- 12 oz (approx. 340g) High-Quality Dark Chocolate (55-70% cocoa), chopped
- 8 oz (approx. 226g) Full-Fat Cream Cheese or Mascarpone, softened
- 1/2 cup (approx. 60g) Powdered Sugar, or to taste
- 1 tsp Pure Vanilla Extract
- Optional Garnish: Edible Gold Dust, finely chopped pistachios/almonds, or extra strawberry slices
Instructions
- Prepare Strawberries: Wash, hull, and finely dice most of the strawberries for the filling. Reserve a few for garnish if desired.
- Make Strawberry Filling: In a bowl, beat softened cream cheese/mascarpone, powdered sugar, and vanilla until smooth. Fold in diced strawberries. Chill.
- Melt and Temper Chocolate: Chop chocolate. Melt 2/3 of it over a double boiler or in a microwave. Stir in remaining 1/3 until smooth and tempered (approx. 88-91°F for dark chocolate).
- Assemble Chocolate Cups: Using a pastry brush, paint 2 thin layers of tempered chocolate inside paper-lined muffin molds, chilling after each layer until firm. Carefully unmold.
- Fill and Garnish: Spoon or pipe strawberry filling into the chocolate cups. Garnish with edible gold dust, nuts, or fresh strawberry slices.
- Chill and Serve: Chill for at least 30 minutes before serving to set the filling and allow flavors to meld.
