Ingredients
- 4 slices sturdy rye bread (marbled or light)
- 1/2 lb thinly sliced cooked corned beef
- 4 slices Swiss cheese
- 1 cup sauerkraut, thoroughly drained
- 4 tablespoons Russian dressing (store-bought or homemade)
- 2 tablespoons unsalted butter, divided
Instructions
- Prepare Ingredients: Lay out all your components: corned beef, Swiss cheese, thoroughly drained sauerkraut, and Russian dressing.
- Assemble Sandwich: Spread 2 tablespoons of Russian dressing on two slices of rye bread. On the other two slices, layer half of the corned beef, then half of the drained sauerkraut, and finally two slices of Swiss cheese. Bring the two halves together to form two sandwiches.
- Melt Butter: In a large skillet or on a griddle, melt 1 tablespoon of butter over medium-low heat.
- Grill First Side: Place one sandwich in the skillet. Cook for 3-5 minutes, or until the bread is golden brown and crispy.
- Grill Second Side: Gently flip the sandwich, pressing lightly with a spatula. Cook for another 3-5 minutes until the second side is golden and the Swiss cheese is fully melted and gooey. Remove from skillet.
- Repeat for Second Sandwich: Add the remaining 1 tablespoon of butter to the skillet and repeat the grilling process for the second sandwich.
- Serve: Slice each sandwich in half and serve immediately with your favorite sides.
