This vibrant lemon dressing is incredibly simple to make and transforms any salad into a gourmet experience. It’s perfectly balanced with bright, tangy flavors and a hint of sweetness.
Ingredients
- ¼ cup fresh lemon juice (from 1–2 lemons)
- ½ cup extra virgin olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon maple syrup or honey (adjust to taste)
- 1 clove garlic, minced
- ½ teaspoon sea salt, or to taste
- ¼ teaspoon freshly ground black pepper, or to taste
- Optional: 1 tablespoon finely chopped fresh herbs (dill, parsley, chives)
Instructions
- In a medium bowl or jar, combine the fresh lemon juice, Dijon mustard, and maple syrup (or honey). Whisk or shake vigorously until well combined.
- While continuously whisking (or shaking vigorously with a lid), slowly drizzle in the extra virgin olive oil until the mixture is emulsified and creamy.
- Stir in the minced garlic, salt, and black pepper. If using, add any optional fresh herbs.
- Taste the dressing and adjust seasonings as needed, adding more salt, pepper, lemon juice, or sweetener to achieve your desired balance.
- Serve immediately or store in an airtight container in the refrigerator. Shake or whisk again before serving if separation occurs.
