Ingredients

  • ¼ cup fresh lemon juice (from 12 lemons)
  • ½ cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon maple syrup or honey (adjust to taste)
  • 1 clove garlic, minced
  • ½ teaspoon sea salt, or to taste
  • ¼ teaspoon freshly ground black pepper, or to taste
  • Optional: 1 tablespoon finely chopped fresh herbs (dill, parsley, chives)

Instructions

  • In a medium bowl or jar, combine the fresh lemon juice, Dijon mustard, and maple syrup (or honey). Whisk or shake vigorously until well combined.
  • While continuously whisking (or shaking vigorously with a lid), slowly drizzle in the extra virgin olive oil until the mixture is emulsified and creamy.
  • Stir in the minced garlic, salt, and black pepper. If using, add any optional fresh herbs.
  • Taste the dressing and adjust seasonings as needed, adding more salt, pepper, lemon juice, or sweetener to achieve your desired balance.
  • Serve immediately or store in an airtight container in the refrigerator. Shake or whisk again before serving if separation occurs.
