Ingredients

  • 1.5 lbs cooked lobster meat, diced into bite-sized pieces (from 23 live lobsters or 46 large tails/claws)
  • 1/2 cup (1 stick) unsalted butter, plus 2 tbsp for toasting buns
  • 2 cloves garlic, minced
  • 1 tsp lemon zest
  • 1/2 cup good quality mayonnaise
  • 2 tbsp fresh chives, finely chopped
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh lemon juice
  • 1/4 tsp black pepper
  • Pinch of salt (more to taste)
  • 6 split-top hot dog buns or brioche buns
  • Optional: Pinch of red pepper flakes
  • Optional: Fresh dill for garnish

Instructions

  • 1. Prepare Lobster: If using live lobsters, boil in salted water for 8-10 minutes, then transfer to an ice bath. Extract meat and dice. If using pre-cooked, simply dice.
  • 2. Make Garlic Butter: In a small saucepan, melt 1/2 cup butter over medium-low heat. Add minced garlic and cook for 2-3 minutes until fragrant. Remove from heat, stir in lemon zest and a pinch of salt. Gently fold the diced lobster meat into the warm garlic butter until coated.
  • 3. Craft Creamy Filling: In a medium bowl, combine mayonnaise, chives, parsley, 1 tbsp lemon juice, pepper, and a pinch of salt. Stir well. Gently fold the garlic-buttered lobster into the creamy mixture.
  • 4. Toast Buns: Melt 2 tbsp butter in a large skillet or griddle over medium heat. Lightly butter the out-facing sides of your buns. Place buns top-side down and toast for 2-3 minutes per side, until golden brown and crunchy.
  • 5. Assemble & Serve: Generously fill each toasted bun with the Garlic Butter Lobster Filling. Garnish with extra chives or dill if desired. Serve immediately.
