Ingredients

  • 1.5 lbs ground beef (85/15 or 90/10 recommended)
  • 1.5 lbs fresh Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil, divided
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp paprika (smoked paprika for extra flavor)
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper, or to taste
  • Optional: Pinch of red pepper flakes, squeeze of lemon juice or drizzle of balsamic glaze for serving

Instructions

  • 1. Prep Brussels Sprouts: Preheat oven to 400°F (200°C). Toss trimmed and halved Brussels sprouts with 1 tbsp olive oil, salt, and pepper on a baking sheet. Set aside.
  • 2. Brown Ground Beef: In a large oven-safe skillet or pan over medium-high heat, add the remaining 1 tbsp olive oil. Add ground beef and cook, breaking it up, until fully browned. Drain excess fat and remove beef to a bowl.
  • 3. Sauté Aromatics: In the same skillet, sauté diced onion over medium heat for 3-5 minutes until softened. Add minced garlic and cook for 1 minute until fragrant.
  • 4. Combine & Season: Return browned ground beef to the skillet with aromatics. Stir in paprika, salt, and black pepper, mixing well.
  • 5. Roast for Perfection: Spread seasoned ground beef mixture and prepared Brussels sprouts evenly on the baking sheet (or keep in oven-safe skillet). Roast for 20-25 minutes, stirring halfway, until sprouts are tender-crisp and caramelized. Serve immediately.
