Ingredients
- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1 (20 oz) can pineapple chunks in juice, drained (reserve 1/4 cup juice)
- 1/2 cup honey
- 1/4 cup soy sauce (or tamari for gluten-free)
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp rice vinegar (or apple cider vinegar)
- 1 tbsp cornstarch
- 1/4 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- 2 tbsp chopped green onions, for garnish
- 1 tsp sesame oil, for drizzling (optional)
Instructions
- 1. Prepare Chicken: Pat chicken pieces dry with paper towels. Season lightly with salt and black pepper.
- 2. Make Sauce: In a medium bowl, whisk together honey, reserved pineapple juice, soy sauce, minced garlic, grated ginger, rice vinegar, cornstarch, and red pepper flakes (if using) until smooth.
- 3. Assemble for Baking: In a 9×13 inch baking dish, combine chicken pieces and pineapple chunks. Pour the sauce evenly over the chicken and pineapple, tossing to coat.
- 4. Bake: Bake in a preheated oven at 375°F (190°C) for 25-30 minutes, or until chicken is cooked through and sauce is thickened and bubbly.
