  • 2 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce (or Tamari for GF)
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1 tbsp olive oil
  • 1 cup uncooked brown rice
  • 2 cups water or chicken broth
  • 1 large ripe avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • Salt and freshly ground black pepper to taste
  • Lime wedges for serving (optional)

Instructions

  • Step 1: Prepare the Honey Lime Marinade: In a medium bowl, whisk together the honey, lime juice, minced garlic, soy sauce, cumin, and chili powder until well combined.
  • Step 2: Marinate the Chicken: Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or ideally 2-4 hours.
  • Step 3: Cook the Rice: While the chicken marinates, cook the brown rice according to package directions (typically 1 cup rice to 2 cups liquid).
  • Step 4: Sear and Bake Chicken: Preheat oven to 375°F (190°C). Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken 3-4 minutes per side until browned. Transfer skillet to oven and bake for 10-15 minutes, or until internal temperature reaches 165°F (74°C).
  • Step 5: Prepare Avocado Rice Mix: In a large bowl, combine the cooked brown rice, diced avocado, chopped cilantro, and an extra squeeze of lime juice. Gently stir to combine and season with salt and pepper.
