Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- Salt and freshly ground black pepper, to taste
- 2 cloves garlic, minced
- 2 cups sliced fresh strawberries (or frozen, thawed)
- 1 tbsp fresh lemon zest
- 1/4 cup fresh lemon juice
- 2 tbsp honey (or maple syrup)
- 2 sprigs fresh thyme (or 1/2 tsp dried)
- 1 tbsp cornstarch
- 2 tbsp cold water
- Fresh strawberries and thyme for garnish (optional)
Instructions
- 1. Prepare Chicken: Pat chicken breasts dry and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken 3-5 minutes per side until golden brown and cooked through. Remove chicken to a plate, tent with foil.
- 2. Make Sauce Base: Reduce heat to medium. Add minced garlic to the pan; cook 30 seconds until fragrant. Stir in sliced strawberries, lemon zest, lemon juice, honey, and thyme sprigs. Simmer for 5-7 minutes, mashing some strawberries.
- 3. Thicken Sauce: Whisk cornstarch with cold water to make a slurry. Pour into simmering sauce, whisking constantly until thickened. Taste and adjust seasoning.
- 4. Combine & Serve: Return chicken to the pan, coating thoroughly in the sauce. Simmer 2-3 minutes to heat through. Remove thyme sprigs. Garnish with fresh strawberries and thyme, then serve immediately.
