Ingredients

  • 1 tablespoon neutral oil (canola, vegetable, grapeseed)
  • 1/2 teaspoon toasted sesame oil, for finishing
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon mirin
  • 1 tablespoon sake (optional, or substitute with vegetable broth)
  • Toasted sesame seeds, for garnish
  • Fresh green onions or cilantro, chopped, for garnish (optional)

Instructions

  • Prep Vegetables: Slice zucchini into 1/4-inch half-moons and onion thinly. Mince garlic and grate ginger.
  • Heat Pan: Heat 1 tablespoon neutral oil in a large wok or skillet over high heat until shimmering.
  • Sauté Onions: Add sliced onions and stir-fry for 2-3 minutes until softened and lightly caramelized. Add garlic and ginger, stir-fry for 30 seconds until fragrant.
  • Add Zucchini: Add zucchini to the wok and stir-fry for 3-5 minutes until crisp-tender and vibrant green.
  • Make Sauce: In a small bowl, whisk together soy sauce, mirin, and sake (if using).
  • Combine & Simmer: Pour sauce into the wok, stir to coat vegetables. Let sauce bubble and slightly thicken for 1 minute.
  • Finish: Remove from heat, drizzle with toasted sesame oil, and toss. Garnish with sesame seeds and fresh herbs, then serve immediately.
