Ingredients
- 2 medium zucchini, trimmed and sliced into 1/4-inch half-moons
- 1 large yellow onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated or minced
- 1 tablespoon neutral oil (canola, vegetable, grapeseed)
- 1/2 teaspoon toasted sesame oil, for finishing
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon mirin
- 1 tablespoon sake (optional, or substitute with vegetable broth)
- Toasted sesame seeds, for garnish
- Fresh green onions or cilantro, chopped, for garnish (optional)
Instructions
- Prep Vegetables: Slice zucchini into 1/4-inch half-moons and onion thinly. Mince garlic and grate ginger.
- Heat Pan: Heat 1 tablespoon neutral oil in a large wok or skillet over high heat until shimmering.
- Sauté Onions: Add sliced onions and stir-fry for 2-3 minutes until softened and lightly caramelized. Add garlic and ginger, stir-fry for 30 seconds until fragrant.
- Add Zucchini: Add zucchini to the wok and stir-fry for 3-5 minutes until crisp-tender and vibrant green.
- Make Sauce: In a small bowl, whisk together soy sauce, mirin, and sake (if using).
- Combine & Simmer: Pour sauce into the wok, stir to coat vegetables. Let sauce bubble and slightly thicken for 1 minute.
- Finish: Remove from heat, drizzle with toasted sesame oil, and toss. Garnish with sesame seeds and fresh herbs, then serve immediately.
