Ingredients
- 1/4 cup (approx. 60g) small-curd cottage cheese, blended smooth
- 1 large egg white (or 1/2 whole egg, lightly beaten)
- 1–2 tbsp granulated sweetener (xylitol, erythritol, or sugar)
- 1 tbsp fresh lemon juice
- 1/2 tsp vanilla extract
- 3 tbsp all-purpose flour (or 1:1 gluten-free blend)
- 1/4 tsp baking powder
- 1/2 – 1 tsp lemon zest
- Optional: Pinch of salt, a few poppy seeds
Instructions
- 1. Prepare the Base: In a microwave-safe mug (12-16 oz) or a separate small bowl, combine the blended cottage cheese, egg white, sweetener, lemon juice, and vanilla extract. Whisk until completely smooth.
- 2. Add Dry Ingredients: Stir in the flour, baking powder, and lemon zest. Mix gently until just combined, being careful not to overmix.
- 3. Microwave: Place the mug in the microwave and cook on high for 60-90 seconds. Cooking time will vary; the cake should be puffed and set but still slightly moist in the center.
- 4. Cool & Serve: Carefully remove the mug from the microwave. Let it cool in the mug for 2-3 minutes before enjoying. Top with desired garnishes.
