  • 12 tbsp granulated sweetener (xylitol, erythritol, or sugar)
  • 1 tbsp fresh lemon juice
  • 1/2 tsp vanilla extract
  • 3 tbsp all-purpose flour (or 1:1 gluten-free blend)
  • 1/4 tsp baking powder
  • 1/21 tsp lemon zest
  • Optional: Pinch of salt, a few poppy seeds

Instructions

  • 1. Prepare the Base: In a microwave-safe mug (12-16 oz) or a separate small bowl, combine the blended cottage cheese, egg white, sweetener, lemon juice, and vanilla extract. Whisk until completely smooth.
