Ingredients
- 1/2 cup (113g) unsalted butter, melted
- 1 cup (200g) packed light brown sugar
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 1 cup (120g) all-purpose flour
- 1/2 teaspoon salt
- 1 cup (approx. 180g) mini Cadbury Easter Eggs, divided
Instructions
- 1. Prep Pan & Oven: Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides.
- 2. Melt Butter & Sugar: In a medium bowl, melt butter. Stir in brown sugar until dissolved and smooth.
- 3. Add Wet Ingredients: Let mixture cool slightly (5 mins). Whisk in egg until fully incorporated, then stir in vanilla extract.
- 4. Combine Dry: In a separate bowl, whisk flour and salt. Gradually add to wet ingredients, mixing only until just combined. Do not overmix.
- 5. Fold in Eggs: Gently fold in 3/4 of the mini Cadbury Easter Eggs into the batter.
- 6. Bake: Pour batter into the prepared pan, spread evenly, and sprinkle with remaining Cadbury eggs. Bake for 25-30 minutes, until edges are golden and center is still slightly soft.
- 7. Cool: Cool completely in the pan on a wire rack before slicing and serving for the best fudgy texture and clean cuts.
