Ingredients
- 1 cup (226g) unsalted butter, softened
- 1 3/4 cups (350g) granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons pure vanilla extract
- 3 1/4 cups (400g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon fine sea salt
- 1/4 cup (22g) unsweetened cocoa powder
- 2 tablespoons (10g) freeze-dried strawberry powder
- Optional: 1-2 drops red gel food coloring
Instructions
- Step 1: Prepare the Dough Base. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then vanilla. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet, mixing until just combined.
- Step 2: Divide and Flavor Dough. Divide dough into three equal portions. Leave one plain for vanilla. Knead cocoa powder into the second portion until chocolate. Knead strawberry powder (and optional food coloring) into the third portion until pink.
- Step 3: Assemble Layers. On separate parchment, roll each dough portion into a 1/4-inch thick rectangle of the same size. Stack the three rectangles (e.g., chocolate, vanilla, strawberry).
- Step 4: Chill for Success. Starting from a long side, carefully roll the stacked dough into a tight log. Wrap tightly in plastic wrap and refrigerate for at least 2 hours, or overnight.
- Step 5: Cut and Bake. Preheat oven to 375°F (190°C). Line baking sheets with parchment. Slice the chilled dough log into 1/4 to 1/2-inch thick cookies. Place on baking sheets and bake for 8-10 minutes, until edges are lightly golden.
- Step 6: Cool and Enjoy. Let cookies cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
