Ingredients
- 2 cups granola (your favorite kind!)
- 1/4 cup melted coconut oil
- 2 tablespoons maple syrup or honey (for base)
- 2 cups plain full-fat Greek yogurt
- 1/4 cup maple syrup or honey (for yogurt)
- 1 teaspoon vanilla extract
- 1.5 cups mixed berries (fresh or frozen)
Instructions
- 1. Prepare Granola Base: Line an 8×8 inch pan with parchment paper. In a food processor, pulse granola until coarse crumbs form. Mix with melted coconut oil and 2 tbsp maple syrup. Press firmly into the pan. Freeze for 15 minutes.
- 2. Mix Yogurt Filling: In a bowl, combine Greek yogurt, 1/4 cup maple syrup, and vanilla extract. Whisk until smooth.
- 3. Layer Bars: Pour yogurt mixture over the chilled granola base, spreading evenly. Scatter mixed berries over the yogurt, lightly pressing them in.
- 4. Freeze until Firm: Return pan to freezer for 3-4 hours or until completely firm. Lift from pan using parchment overhang, let sit 5-10 minutes, then slice with a warm, sharp knife. Store in an airtight container in the freezer.
