Ingredients
- 1.5 lbs (about 680g) smoked kielbasa, cut into ½-inch thick rounds
- 1 large head broccoli, cut into bite-sized florets
- 2 bell peppers (any color), seeded and cut into 1-inch strips
- 2 tbsp olive oil
- Salt and freshly ground black pepper, to taste
- For the Honey Garlic Glaze:
- ¼ cup honey
- 3 tbsp soy sauce (or tamari for gluten-free)
- 4 cloves garlic, minced
- Optional: ½ tsp red pepper flakes, for a touch of heat
- Optional: Fresh parsley or sesame seeds, for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
- In a small bowl, whisk together honey, soy sauce, and minced garlic (and red pepper flakes, if using) to make the glaze. Set aside.
- On the prepared baking sheet, combine kielbasa, broccoli florets, and bell pepper strips. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly. Spread in a single layer.
- Roast for 15 minutes. Remove from oven, stir or flip the ingredients, and return to the oven for another 10-15 minutes, or until vegetables are tender-crisp and kielbasa is lightly browned.
- Remove the pan from the oven. Pour the honey-garlic glaze over the cooked ingredients. Toss gently to ensure everything is coated.
- Serve immediately, garnished with fresh parsley or sesame seeds, if desired.
