Ingredients
- 2 ¼ cups all-purpose flour, divided
- ¾ cup granulated sugar, divided
- ½ cup packed light brown sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt, plus a pinch
- 1 cup (2 sticks) unsalted butter, very cold and cubed
- 8 oz (1 brick) full-fat cream cheese, softened
- 1 large egg
- 1 teaspoon pure vanilla extract
- 4–5 medium peaches, peeled, pitted, and sliced (about 3 cups)
- 1 tablespoon fresh lemon juice
Instructions
- 1. Prepare Pan & Crumble: Preheat oven to 375°F (190°C). Line a 9×13 inch pan with parchment, grease lightly. In a bowl, whisk 2 cups flour, ¼ cup granulated sugar, brown sugar, baking powder, ¼ tsp salt. Cut in cold butter until coarse crumbs form. Reserve 1 ½ cups for topping.
- 2. Form Crust: Press remaining crumble mixture firmly into the bottom of the prepared pan. Bake for 15 minutes until lightly golden.
- 3. Prepare Cream Cheese Layer: In a bowl, beat softened cream cheese with ¼ cup granulated sugar until smooth. Beat in egg and vanilla extract until just combined.
- 4. Prepare Peach Filling: In another bowl, combine sliced peaches, remaining ¼ cup granulated sugar, and lemon juice.
- 5. Assemble & Bake: Spread cream cheese mixture over the warm crust. Arrange peaches evenly over cream cheese. Sprinkle reserved crumble topping over peaches. Bake for 35-45 minutes, until topping is golden and filling is bubbly.
- 6. Cool Completely: Let bars cool completely on a wire rack for 2-3 hours, then refrigerate for at least 2 hours (or overnight) before lifting and cutting into squares.
