Ingredients

  • 1 medium head green cabbage (about 22.5 lbs)
  • 23 tablespoons olive oil
  • 1 teaspoon sea salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (optional, but highly recommended)

Instructions

  • 1. Preheat Oven & Prep Cabbage: Preheat your oven to 400°F (200°C). Remove outer leaves from the cabbage, rinse, and pat dry. Slice the cabbage into 1/2 to 3/4-inch thick ‘steaks,’ ensuring the core holds each slice together.
  • 2. Season Generously: Arrange cabbage steaks in a single layer on a large baking sheet (use two if necessary to avoid overcrowding). Drizzle generously with olive oil, then sprinkle evenly with salt, pepper, garlic powder, and smoked paprika. Gently rub the seasonings into both sides of the cabbage.
  • 3. Roast Until Tender and Crisp: Roast for 20-30 minutes, flipping the steaks halfway through. Cook until the edges are golden brown and slightly caramelized, and the center is tender when poked with a fork.
  • 4. Serve Immediately: Remove from oven and serve hot. A squeeze of fresh lemon juice or a sprinkle of fresh herbs can be added if desired. Enjoy!
