  • 1/2 cup old-fashioned rolled oats
  • 1 tablespoon chia seeds
  • 1 cup fresh strawberries, hulled and diced (divided)
  • 3/4 cup milk (dairy or non-dairy)
  • 1/4 cup Greek yogurt (dairy or non-dairy)
  • 1 tablespoon maple syrup (or honey/agave)
  • 1/2 teaspoon vanilla extract
  • Optional toppings: extra strawberries, whipped cream, granola

Instructions

  • 1. Prep Strawberries: Hull and dice 1 cup of strawberries. In a small bowl, lightly mash half of the diced strawberries.
  • 2. Combine Dry Ingredients: In a jar or container, combine rolled oats and chia seeds.
  • 3. Add Wet Ingredients: Pour in milk, Greek yogurt, maple syrup, and vanilla extract. Stir well until all dry ingredients are moistened.
  • 4. Layer: Add half of the plain diced strawberries to the oat mixture. Spoon in the mashed strawberry mixture, then top with the remaining plain diced strawberries.
  • 5. Chill: Cover and refrigerate for a minimum of 4 hours, or ideally overnight (8+ hours).
  • 6. Serve: In the morning, stir, add a splash more milk if needed for consistency, and garnish with desired toppings before serving.
