Ingredients
- 1/2 cup old-fashioned rolled oats
- 1 tablespoon chia seeds
- 1 cup fresh strawberries, hulled and diced (divided)
- 3/4 cup milk (dairy or non-dairy)
- 1/4 cup Greek yogurt (dairy or non-dairy)
- 1 tablespoon maple syrup (or honey/agave)
- 1/2 teaspoon vanilla extract
- Optional toppings: extra strawberries, whipped cream, granola
Instructions
- 1. Prep Strawberries: Hull and dice 1 cup of strawberries. In a small bowl, lightly mash half of the diced strawberries.
- 2. Combine Dry Ingredients: In a jar or container, combine rolled oats and chia seeds.
- 3. Add Wet Ingredients: Pour in milk, Greek yogurt, maple syrup, and vanilla extract. Stir well until all dry ingredients are moistened.
- 4. Layer: Add half of the plain diced strawberries to the oat mixture. Spoon in the mashed strawberry mixture, then top with the remaining plain diced strawberries.
- 5. Chill: Cover and refrigerate for a minimum of 4 hours, or ideally overnight (8+ hours).
- 6. Serve: In the morning, stir, add a splash more milk if needed for consistency, and garnish with desired toppings before serving.
