Ingredients
- 1 (15.25 oz) box yellow cake mix (with pudding in the mix is best)
- Ingredients typically called for on cake mix box (eggs, oil, water/milk)
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup sour cream
- 1 tsp lemon zest (optional)
- 1 tbsp all-purpose flour
- 1 cup strawberry jam or preserves
- Fresh strawberries for garnish (optional)
Instructions
- 1. Prepare Oven and Pan: Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- 2. Mix Cake Batter: Prepare cake mix according to package directions in a large bowl. Pour batter into the prepared pan and spread evenly.
- 3. Prepare Cream Cheese Swirl: In a separate bowl, beat softened cream cheese, sugar, and 1 egg until smooth. Mix in vanilla, sour cream, lemon zest (if using), and flour until just combined.
- 4. Assemble Layers: Spoon dollops of cream cheese mixture over the cake batter. Drop spoonfuls of strawberry jam over the cream cheese. Gently swirl with a knife or skewer for the ‘earthquake’ effect.
- 5. Bake Cake: Bake for 45-55 minutes, or until a wooden skewer inserted into the cake (avoiding large cream cheese pockets) comes out with moist crumbs.
- 6. Cool and Serve: Let the cake cool completely in the pan on a wire rack before slicing and serving. Garnish with fresh strawberries if desired.
