- 2 English or 4–5 Persian cucumbers
- 1 tsp salt (for salting cucumbers)
- 2 tbsp soy sauce (light or low-sodium)
- 2 tbsp rice vinegar
- 1 tbsp granulated sugar
- 1–2 tbsp Gochugaru (Korean chili flakes), to taste
- 1 tbsp roasted sesame oil
- 2 cloves garlic, minced
- 2 scallions, thinly sliced
- 1 tsp toasted sesame seeds, for garnish (optional)
Instructions
