Ingredients
- 1 block (14 oz) extra-firm tofu, pressed and sliced
- 1/4 cup buffalo sauce (e.g., Frank’s RedHot Buffalo Wing Sauce)
- 4 slices thick-cut bread (sourdough, challah, or sturdy sandwich bread)
- 4–6 slices cheese (cheddar, Monterey Jack, or non-dairy equivalent)
- 2–3 tbsp mayonnaise or softened butter, for grilling
- Olive oil or avocado oil, for cooking tofu
- Salt and black pepper to taste
- Optional: Finely diced celery, blue cheese crumbles
Instructions
- Press the Tofu: Press tofu for at least 30 minutes. Slice into 1/4-inch thick pieces and pat dry.
- Cook the Tofu: Season tofu with salt and pepper. Heat 1 tbsp oil in a skillet over medium-high heat. Cook tofu until golden brown and crispy on both sides (3-4 mins per side). Toss cooked tofu with buffalo sauce.
- Assemble Sandwiches: Spread mayo/butter on one side of each bread slice. Place two slices mayo-side down. Layer with cheese, buffalo tofu, optional add-ins, and more cheese. Top with remaining bread slices, mayo-side up.
- Grill to Perfection: Heat a clean skillet over medium-low heat. Grill sandwiches for 3-5 minutes per side, pressing gently, until bread is golden and crispy, and cheese is fully melted. Slice and serve immediately.
