Ingredients
- 3 large russet potatoes, scrubbed
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1 cup raw cashews, soaked
- 1/2 cup nutritional yeast
- 2 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Dijon mustard
- 1/4 tsp turmeric (for color)
- 1/2 tsp smoked paprika
- 1 cup vegetable broth (plus more as needed)
- For Toppings: Sliced green onions, fresh or pickled jalapeños, vegan bacon crumbles, fresh cilantro/parsley
Instructions
- Prep Fries: Preheat oven to 425°F (220°C). Cut potatoes into 1/4-1/2 inch fries. Soak in cold water for 30 mins, then drain and pat very dry. Toss with olive oil, salt, pepper, garlic powder, and paprika. Spread on a baking sheet.
- Roast Fries: Roast for 25-35 minutes, flipping halfway, until golden and crispy.
- Make “Cheese” Sauce: While fries roast, drain soaked cashews. Blend cashews, nutritional yeast, lemon juice, garlic powder, onion powder, Dijon mustard, turmeric, smoked paprika, salt, and 1/2 cup broth in a high-speed blender until very smooth. Add more broth, 1 tbsp at a time, if too thick.
- Assemble & Bake: Arrange hot fries on an oven-safe platter. Drizzle generously with “cheese” sauce. Bake for 5-7 minutes until warm and bubbly.
- Garnish & Serve: Remove from oven and immediately top with green onions, jalapeños, vegan bacon crumbles, and fresh cilantro/parsley. Serve hot.
