Ingredients

  • 6 cups seedless watermelon, cubed (1-inch) and chilled
  • 6 ounces block feta cheese, crumbled or cubed
  • ¼ cup fresh mint leaves, chiffonaded
  • ¼ small red onion, very thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lime juice
  • ¼ teaspoon sea salt (or to taste)
  • ¼ teaspoon freshly ground black pepper (or to taste)

Instructions

  • 1. Prep Watermelon: Dice chilled watermelon into 1-inch cubes and place in a large mixing bowl.
  • 2. Slice Onion: Thinly slice the red onion and add to the bowl with the watermelon.
  • 3. Chiffonade Mint: Prepare mint by stacking leaves, rolling, and thinly slicing; add to the bowl.
  • 4. Crumble Feta: Crumble or cube the feta cheese and add it to the other ingredients.
  • 5. Whisk Dressing: In a small bowl, whisk together olive oil, lime juice, salt, and pepper until combined.
  • 6. Combine & Serve: Pour the dressing over the salad ingredients. Gently toss to combine just before serving.
