Ingredients
- 6 cups seedless watermelon, cubed (1-inch) and chilled
- 6 ounces block feta cheese, crumbled or cubed
- ¼ cup fresh mint leaves, chiffonaded
- ¼ small red onion, very thinly sliced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh lime juice
- ¼ teaspoon sea salt (or to taste)
- ¼ teaspoon freshly ground black pepper (or to taste)
Instructions
- 1. Prep Watermelon: Dice chilled watermelon into 1-inch cubes and place in a large mixing bowl.
- 2. Slice Onion: Thinly slice the red onion and add to the bowl with the watermelon.
- 3. Chiffonade Mint: Prepare mint by stacking leaves, rolling, and thinly slicing; add to the bowl.
- 4. Crumble Feta: Crumble or cube the feta cheese and add it to the other ingredients.
- 5. Whisk Dressing: In a small bowl, whisk together olive oil, lime juice, salt, and pepper until combined.
- 6. Combine & Serve: Pour the dressing over the salad ingredients. Gently toss to combine just before serving.
