Ingredients
- 2 lbs (approx. 6-8 medium) ripe nectarines, pitted and chopped
- 2 cups granulated sugar
- 2 tbsp fresh lemon juice
Instructions
- 1. Prepare Nectarines: Wash nectarines, pit, and chop into 1/2-inch pieces. Place in a large, heavy-bottomed pot.
- 2. Combine Ingredients: Add sugar and lemon juice to the pot with nectarines. Stir well and let sit for 10-15 minutes to release juices.
- 3. Simmer to Consistency: Bring mixture to a rolling boil over medium-high heat, stirring frequently. Reduce heat to medium-low and simmer for 20-30 minutes, stirring occasionally and mashing fruit until thickened.
- 4. Test for Set: Perform the wrinkle test (spoon a small amount onto a frozen plate, freeze for 1-2 mins, then push with a finger – if it wrinkles, it’s ready).
- 5. Jar and Store: Remove from heat, skim any foam, and carefully ladle into sterilized jars. Cool completely before refrigerating or processing for canning.
