Ingredients
- 8 slices thick-sliced bread (Brioche, Challah, or Texas Toast)
- 8 slices thick-cut bacon, cooked crispy and crumbled
- 4 oz (1/2 block) cream cheese, softened
- 2 tbsp pure maple syrup, plus more for glaze
- 1 tbsp bourbon, plus more for glaze (optional)
- 1 tbsp light brown sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 2 large eggs
- 1/4 cup milk or cream
- 2 tbsp unsalted butter, for cooking
- Powdered sugar for dusting (optional)
Instructions
- Prepare the Bacon Filling: Cook bacon until crispy. Crumble and set aside. In a bowl, mix softened cream cheese, 2 tbsp maple syrup, 1 tbsp bourbon (if using), brown sugar, cinnamon, and nutmeg until smooth. Fold in crumbled bacon.
- Assemble the Stuffed Toast: Spread about 2-3 tablespoons of filling onto one slice of bread, leaving a border. Top with another slice, pressing firmly to seal edges. Repeat for all slices.
- Prepare the Egg Wash: In a shallow dish, whisk eggs, milk/cream, and optional extra maple syrup until well combined.
- Cook the Stuffed Toast: Heat butter in a large skillet or griddle over medium heat. Dip each stuffed sandwich in egg wash, coating both sides. Place on skillet and cook for 3-5 minutes per side, until golden brown and hot.
- Finish with Bourbon Maple Glaze: Whisk together extra maple syrup and a splash of bourbon for a glaze. Drizzle over cooked toast. Serve immediately, dusted with powdered sugar if desired.
