Ingredients

  • 8 large eggs
  • 1 tbsp milk or water (optional, for fluffiness)
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp butter or oil
  • 8 small corn or flour tortillas
  • 1/2 cup cooked breakfast sausage, bacon bits, or black beans
  • 1/4 cup finely diced onion (optional)
  • 1/4 cup finely diced bell pepper (optional)
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1/4 cup fresh cilantro, chopped, for topping
  • 1 medium avocado, sliced or mashed, for topping
  • Your favorite salsa, for topping
  • Hot sauce, for topping

Instructions

  • 1. Prepare Fillings: Cook bacon or sausage until crispy; drain fat and set aside. Sauté diced onions and bell peppers until softened (if using). Chop cilantro and slice avocado.
  • 2. Cook Eggs: Whisk eggs with milk/water, salt, and pepper. Heat butter/oil in a non-stick skillet over medium-low heat. Pour in eggs. Gently push cooked eggs towards the center, allowing uncooked egg to flow underneath, until mostly set but still moist. Remove from heat.
