- For the Peach Filling:
- 2.5 lbs (about 6–8 medium) fresh peaches, peeled and sliced 1/2-inch thick
- 1/2 cup granulated sugar (adjust to taste)
- 2 tbsp cornstarch
- 1 tbsp fresh lemon juice
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon (optional)
- 1/4 tsp ground nutmeg (optional)
- For the Brown Butter Topping:
- 1/2 cup (113g) unsalted butter
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup whole milk
Instructions
- 1. Prepare Peaches: In a large bowl, combine sliced peaches, 1/2 cup granulated sugar, cornstarch, lemon juice, vanilla, cinnamon, and nutmeg. Toss gently and set aside.
- 2. Brown Butter: In a light-colored saucepan, melt butter over medium heat. Continue cooking, stirring, until foamy, with brown bits at the bottom and a nutty aroma (5-7 mins). Pour into a heatproof bowl to cool slightly.
- 3. Make Topping Batter: In a separate bowl, whisk together flour, 1/2 cup granulated sugar, brown sugar, baking powder, and salt. Whisk milk into the slightly cooled brown butter. Add wet to dry ingredients and stir until just combined.
- 4. Assemble & Bake: Preheat oven to 375°F (190°C). Pour peach mixture into a 9×13 inch baking dish. Dollop spoonfuls of batter evenly over peaches. Bake for 35-45 minutes, until bubbly and topping is golden brown.
- 5. Cool & Serve: Let cool for 15-20 minutes before serving warm, ideally with ice cream or whipped cream.
