Ingredients
- 1 baguette or ciabatta loaf, sliced 1/2-inch thick
- 3–4 ripe Roma tomatoes (about 1.5 lbs), diced
- 1/4 cup fresh basil, chiffonaded
- 3–4 tablespoons extra virgin olive oil (plus more for bread)
- 1–2 cloves garlic, peeled
- Salt to taste
- Freshly ground black pepper to taste
- Optional: Balsamic glaze for drizzling
Instructions
- 1. Dice tomatoes and chiffonade basil. Combine in a bowl with 3-4 tbsp olive oil, salt, and pepper. Let macerate for 15-20 minutes.
- 2. Slice bread into 1/2-inch pieces. Brush lightly with olive oil on both sides.
- 3. Toast bread in a 400°F (200°C) oven for 5-8 minutes or under broiler for 1-3 minutes until golden and crispy.
- 4. Remove warm toast from oven. Immediately rub one side of each slice with a peeled garlic clove.
- 5. Spoon the tomato-basil mixture generously onto each garlic-rubbed toast. Serve immediately, drizzled with balsamic glaze if desired.
