Ingredients

  • 2 cups shredded cooked chicken breast
  • 1/2 cup buffalo wing sauce (adjust to taste)
  • 4 oz cream cheese, softened
  • 2 tablespoons ranch dressing
  • 1/4 cup crumbled blue cheese (optional)
  • 2 tablespoons chopped green onions (optional)
  • 12 egg roll wrappers
  • 1 tablespoon vegetable oil or olive oil, for brushing
  • Extra ranch or blue cheese dressing, for dipping

Instructions

  • 1. Prepare the Filling: In a large bowl, combine the shredded chicken, buffalo sauce, softened cream cheese, ranch dressing, and optional blue cheese and green onions. Mix well until everything is thoroughly combined.
  • 2. Assemble Egg Rolls: Lay an egg roll wrapper on a clean surface like a diamond. Place about 2-3 tablespoons of filling just below the center. Fold the bottom corner over the filling, then fold in the left and right corners. Roll tightly upwards, moistening the top corner with water to seal.
  • 3. Preheat & Prepare: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange egg rolls in a single layer, not touching.
  • 4. Bake to Crispness: Lightly brush tops and sides of each egg roll with oil. Bake for 15-20 minutes, flipping halfway, until golden brown and crispy.
