Description

An unbelievably easy and elegant appetizer featuring creamy burrata and fresh tomatoes on crisp, garlic-rubbed toast. Perfect for any gathering, promising rich flavors with minimal effort.


Ingredients

  • 1 crusty baguette or ciabatta loaf, sliced 1/2-inch thick
  • 2 tablespoons extra virgin olive oil, plus more for drizzling
  • Salt and freshly ground black pepper, to taste
  • 34 ripe Roma tomatoes, finely diced
  • 1/4 cup fresh basil leaves, torn or roughly chopped
  • 2 cloves fresh garlic, peeled
  • 8 oz (225g) fresh burrata cheese, drained and at room temperature

Instructions

  • Preheat Oven & Toast Bread: Preheat your oven to 400°F (200°C). Arrange bread slices on a baking sheet. Drizzle with 2 tablespoons olive oil and sprinkle with salt. Bake for 8-12 minutes, or until golden brown and crisp.
  • Prepare Tomato Mixture: In a medium bowl, combine diced tomatoes, fresh basil, a drizzle of olive oil, salt, and pepper. Toss gently and let sit while bread cools slightly.
  • Rub Garlic on Toast: Once bread is out of the oven and still warm, rub a peeled garlic clove vigorously over the surface of each slice.
  • Assemble & Serve: Spoon the tomato mixture onto each garlic-rubbed toast. Tear or dollop pieces of burrata over the tomatoes. Drizzle with a little more olive oil, garnish with a fresh basil leaf, and serve immediately.
