Ingredients

  • 1 tbsp olive oil
  • 1 lb mixed seafood (shrimp, scallops, white fish), cut into bite-sized pieces
  • 2 tbsp unsalted butter
  • 1 small yellow onion, diced
  • 2 stalks celery, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup seafood or chicken broth
  • 1 tbsp Old Bay seasoning
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley, chopped (divided)
  • 1 cup frozen peas, thawed
  • 1 box (about 11.3 oz) Cheddar Bay Biscuit mix
  • 1/2 cup shredded sharp cheddar cheese, plus more for garnish (optional)
  • Cold water or milk (as per biscuit mix instructions)
  • 2 tbsp unsalted butter, melted (for brushing)
  • 1 clove garlic, minced (for brushing)

Instructions

  • Prepare Seafood: Heat 1 tbsp olive oil in a large Dutch oven over medium-high heat. Sear shrimp and scallops for 1-2 minutes per side until just opaque. Remove and set aside.
  • Build Sauce Base: Reduce heat to medium. Add 2 tbsp butter to the pot. Sauté onion, celery, and carrots for 5-7 minutes until soft. Stir in 3 minced garlic cloves and cook for 1 minute until fragrant. Sprinkle in 1/4 cup flour, cook, stirring, for 1-2 minutes to form a roux.
  • Simmer Sauce: Gradually whisk in 2 cups milk and 1 cup broth. Stir in 1 tbsp Old Bay, 1/2 tsp black pepper, and half of the chopped parsley. Bring to a gentle simmer, stirring, until thickened (5-7 minutes).
  • Combine Filling: Stir in thawed peas and the par-cooked seafood. Taste and adjust seasonings.
  • Prepare Biscuits: Preheat oven to 400°F (200°C). In a bowl, combine biscuit mix with cold water/milk (per package) and 1/2 cup shredded cheddar. Mix until just combined.
  • Assemble & Bake: Pour filling into a 9×13 inch baking dish or keep in the Dutch oven. Drop spoonfuls of biscuit dough over the top. Bake for 20-25 minutes, or until biscuits are golden and filling is bubbly.
  • Finish & Serve: Melt 2 tbsp butter, stir in 1 minced garlic clove and remaining parsley. Brush over hot biscuits once out of the oven. Let cool for 10-15 minutes before serving.
