This one-pan wonder combines crispy pan-fried pierogi with savory kielbasa and tender vegetables, all smothered in melty cheese. It’s a quick, comforting, and incredibly satisfying meal perfect for any weeknight.
Ingredients
- 1 tbsp olive oil, divided
- 1 lb smoked kielbasa, sliced into 1/2-inch rounds
- 1 tbsp unsalted butter
- 1 medium yellow onion, diced
- 1 bell pepper (any color), diced
- 1 (12-16 oz) package frozen potato and cheese pierogi, no need to thaw
- 1/2 cup low-sodium chicken broth
- 1 tsp smoked paprika
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper (or to taste)
- 1.5 cups shredded cheddar cheese (or cheese blend)
Instructions
- 1. Prep Your Ingredients: Slice kielbasa, dice onion and bell pepper, and grate cheese.
- 2. Brown the Kielbasa: Heat 1 tbsp olive oil in large skillet over medium-high heat. Add kielbasa and cook 3-5 minutes per side until browned. Remove and set aside.
- 3. Sauté the Vegetables: Add remaining 1 tbsp olive oil and butter to skillet. Sauté onion and bell pepper for 5-7 minutes until softened.
- 4. Cook the Pierogi: Add frozen pierogi, chicken broth, smoked paprika, salt, and pepper to skillet. Cover and simmer 5-7 minutes until tender. Uncover and cook another 5-7 minutes until golden and slightly crispy.
- 5. Combine: Return kielbasa to skillet. Stir everything together gently and simmer for 1-2 minutes to meld flavors.
- 6. Add Cheese & Melt: Sprinkle shredded cheese over the skillet. Cover and cook over low heat for 3-5 minutes, or transfer to a 350°F (175°C) oven for 5-10 minutes, until cheese is melted and bubbly. Serve immediately.
